The Auyama Cake, pumpkin or squash, is one of the richest and cheapest desserts there is, and this recipe that I show you is like a cheese. Ingredients for the Quesillo Auyama Cake:
• 500 gr of pumpkin (pumpkin)
• 3 eggs
• 100 grs butter
• 2 and 1/2 cups of flour
• 1 tablespoon of baking powder
• 1/2 cup of sunflower or corn oil
• 4 tablespoons of vanilla
• 1 tablespoon of cinnamon
• 1 cup of brown sugar
• 1/4 cup of condensed milk
• 1/2 cup raisins
Preparation of the squash cake:
First we cut the squash and boil it, when it is soft we strain it and mash with a fork until it is pureed. We place it in a large container and add all the ingredients on the list except the raisins, I’ll tell you why. (we mix everything first and the flour last)
We mix everything well, it can be with a whisk, with a fork or with the machine while we soak the raisins (in rum or water). This will make them puff and remain moist and their flavor will be felt more in the cake. I love how simple and rich it is, just like the Carrot Cake that you can’t miss!
