The Auyama Cake, pumpkin or squash, is one of the richest and cheapest desserts there is, and this recipe that I show you is like a cheese. It is very simple to prepare and delicious, here I leave you step by step with photos and video all the details for your preparation. I hope you enjoy it like me! 🙂

Ingredients for the Quesillo Auyama Cake:
• 500 gr of pumpkin (pumpkin)
• 3 eggs
• 100 grs butter
• 2 and 1/2 cups of flour
• 1 tablespoon of baking powder
• 1/2 cup of sunflower or corn oil
• 4 tablespoons of vanilla
• 1 tablespoon of cinnamon
• 1 cup of brown sugar
• 1/4 cup of condensed milk
• 1/2 cup raisins
Preparation of the pumpkin cake:
First we cut the squash and boil it, when it is soft we strain it and mash with a fork until it is pureed. We place it in a large container and add all the ingredients on the list except the raisins, I’ll tell you why. (we mix everything first and the flour last)
We mix everything well, it can be with a whisk, with a fork or with the machine while we soak the raisins (in rum or water). This will make them puff and remain moist and their flavor will be felt more in the cake. I love how simple and rich it is, just like the Carrot Cake that you can’t miss!
Once the raisins are inflated, we drain the water and pass them through flour and add it to the mixture (with this trick they do not remain in the bottom of the cake).
We are preheating the oven to 200ºC
We butter the mold, flour it and empty the mixture. Lastly, sprinkle 4 tablespoons of brown sugar over it.
Bake at 200ºC for 40 to 45 minutes. (It will be ready when it comes out dry when inserting a toothpick) Then you have to let it cool well so that it compacts, since when you remove it it is still very soft and gives the impression that it is raw even if it is not. A fact: The next day it is more tasty! 😉
If you want, you can make a caramel for that we melt 100 grams of sugar and heat water apart and when it is melted add 6 tablespoons of hot water and a little vanilla. It was a QUESILLO type, very rich! Now do not miss these Auyama Cookies, they are spectacular! click on the photo to see the recipe
