These delicious alfajores are going to melt in your mouth! Filled with dulce de leche and grated coconut! You will not believe how rich they are going to be ^. ^ Yum !!
Ingredients for the alfajores:
• 300 gr of cornstarch
• 200 gr of Butter, lard or margarine
• 200 gr of all-purpose wheat flour
• 3 egg yolks
• 150 gr of icing sugar
• 1 cup of dulce de leche
• Zest of 1 lemon
• 1 teaspoon vanilla
• 1 teaspoon of baking powder
• Grated coconut

Preparation of the cornstarch alfajores
We start by mixing the butter with the icing sugar in the machine or by hand. Beat and add the 3 egg yolks, the vanilla and the lemon zest.
In a counter we are going to sift the cornstarch, flour and baking powder. We make a small hole in the center and add the mixture that we have just prepared. We are going to unite all the ingredients until they are all integrated but without kneading; We will let this dough rest in the fridge wrapped in plastic wrap (envoplast) for an hour.
After the hour, we place it back on the counter and with our hands we are going to flatten it a little and then do it with the roller until they are approximately 1/2 cm thick. (I recommend a wooden roller, I started with a metal one and it stuck everything)
This mass is brittle, almost dusty. Do not despair or think that you did something wrong, she is so brittle but it is the right texture so that afterwards they melt in your mouth! You can eat a little dulce de leche in the meantime to make the work more bearable! LOL
We cut it into little circles with a cookie cutter. We oil a tray so that they do not stick to us and we will bake at 180ºC for approximately 10 to 12 minutes. Remember that they should not be browned … they should be white, they will realize that they are ready when they are moved and they feel light.
We take them out of the oven and let them cool on a preferred rack … I did it on a plate without any problem. Then we take a cookie, spread it with dulce de leche and paste the other one, add more dulce de leche around the edges and roll them with the grated coconut !!! (here I already have my mouth watering !!!)
Sprinkle a little icing sugar and YUM !!! give them a bite .. because if you didn’t do it by now, you’re not from this planet !! You will not believe how rich they are going to be, they melt in your mouth, they are too rich!
