Whenever we hear the word “mashed” automatically the image of mashed potatoes comes to us.
In this opportunity I will show you a carrot puree that is really delicious and more nutritious than the potato purée because it has more vitamins and is rich in beta-carotene which is an excellent antioxidant … apart from that it is an excellent option to include vegetables for the little ones of the house.
See how the Carrot Puree is prepared:
1. Wash, peel and slice four large carrots (1 per person)
2. We boil them in water with a little salt until they soften.
3. Drain and place in a saucepan with a drizzle of olive oil, rosemary, a clove of crushed garlic, salt and pepper (to taste)
4. We stir everything and cook until the carrots are a little brown and then we press them with a fork or the utensil to mash potatoes until they are pureed.
Note: To my liking, I do not leave it so “mush” and I leave it to everyone’s choice 🙂 Bon appetit!
