The Plantintá or Plantain tart is a well-known dessert from the province of Colón. Its name originates from the English Plantain tart, its translation would be banana tart, this delicious Caribbean empanada is an old Afro-Antillean recipe that was inherited thanks to the mixture of cultures.
This is not just any empanada nor is it a cake; but there is no doubt that platintá is one of the best legacies of Jamaican cuisine.
As we mentioned before, the name of plantintá is due to the banana, which is its main ingredient, combined with nutmeg, sugar and cinnamon. This is a dish brought by immigrants to the Caribbean area, many of these dishes are made from bananas.
When English rule prevailed in Jamaica, the English promoted the cooking of sweets and Jamaicans began to make pastries with their own crops.
According to historical data, the platintá is used as a dessert at any time and is not prepared only for special occasions.

Preparation
- In this preparation we are going to start with the filling; The first thing we are going to do is place the bananas cut in 3 with their peel in boiling water with the Cinnamon, salt and sugar. After they are soft, we peel them and we must crush them, we test the level of sweetness, and in case of missing we rectify with sugar. At this time add the Vanilla along with the red coloring, the cola and the chipotle pineapple sauce, mix well until all the ingredients are incorporated, remember that it should have the texture of a puree. We booked.
- Now it is time to prepare the dough, we must make a volcano with the flour, then add the sugar, cinnamon, margarine and a touch of salt. Knead with a fork, then add cold water by the spoonfuls and finish kneading with your hands until you get a smooth and manageable dough. We let it rest for a few minutes.
- After our dough rests, we take the dough and stretch it with a rolling pin between 2 paraffin papers, we make rounds with the dough and fill them with the banana mixture that we made previously, close and press the edges helping us with a fork and We make a small hole in the upper part with a toothpick to prevent it from filling with air and inflating.
- To finish, place them on a greased tray and bake for approximately 20 minutes at 350 ° or until golden brown. At the moment of serving, we sprinkle icing sugar, with the help of a strainer. Ready now, we just have to enjoy a delicious dish.
