A super cheap dish, low in calories and with a lot of flavor, you can accompany it with rice and salad.
Ingredients for the tuna stuffed aubergines:
- 3 medium aubergines
- 1 large can of tuna (or 2 small ones)
- 1 medium onion …
- 1 medium carrot
- 3 garlic cloves
- 3 slices of cheese of your choice
- 2 tablespoons of oil
- Salt and pepper
Preparation of the tuna stuffed aubergines:
First we cut the aubergines in half lengthwise and remove the pulp. Some do it with a teaspoon but it really is easier to make a few cuts with a knife and we try to remove it that way. And in the end if I eat the teaspoon.
The pulp is cut into small squares as well as the onion, carrot and garlic. We add salt and pepper to taste.
Sauté everything with two tablespoons of olive oil and add the tuna. Cook until the tuna is toasted and the vegetables are poached and cooked.
Add a little salt to the canoitas of the aubergines and fill with the sauce.
Put them in the oven for 15 min at 200ºC as I always say, time gives it to the eye! Pending that they do not burn us.
When they are almost ready, we add some slices of cheese (your choice) … so they will melt and it will be richer!
