Focaccia, also typical of Liguria (Italy) There they eat it for breakfast with a coffee with milk. I tell you that the smell that the bakeries give off with the focaccia in the morning is like walking in the heaven of bread!
Ingredients for the Focaccia Ligure (Genovesa):
- 500 gr of wheat flour
- 350 cc of water
- Beer yeast…
- 1/2 teaspoon of sugar
- Coarse salt
- Fine salt
- Olive oil
- 1 Onion (optional)
Preparation of the Focaccia Ligure (Genovesa):
First, we place the yeast in half a glass of warm water with the 1/2 teaspoon of sugar and wait for it to ferment (10 min).
We place the flour on the table, make a hole in the center like a volcano and add the rest of the water, the yeast and half a teaspoon of fine salt.
We knead very well until it is smooth and we put it in a dark place without ventilation for half an hour (it can be the oven without turning on)
Inside the oven without turning on, place a cup of hot water to give it moisture.
When the dough grows twice, we knead again and stretch with a rolling pin on the previously buttered and floured tray. Cup with your fingers and pour in the olive oil and coarse salt. (some chopped onions give it a unique flavor)
Bake at 200 ° until golden.
