Baked Stuffed Zucchini


They are crisp, light, and tasty! In addition to being a super cheap dish with these baked zucchini you will show off to everyone. Enjoy it!


4 medium zucchini

1 onion

2 cloves of garlic

100grs of ham

2 boiled eggs

3 tablespoons of Parmesan cheese

Salt and pepper.


Cut the zucchini in half lengthwise, let it boil with enough water for 2 minutes with a pinch of salt. Then we scoop out the pulp (meat) of the zucchini.

Sauté the cut onion, garlic, zucchini pulp and ham. We add salt and pepper to taste.

On the other hand, we crumble the boiled eggs and mix them with the sauce once it is ready along with 3 tablespoons of Parmesan cheese.

Fill the zucchini with the mixture, sprinkle more Parmesan cheese on top 🙂

We bake them for 10 minutes at 130ºC (always watch them, they do not burn, I bring the temperatures to the eye) and we finish by grilling them for 5 more minutes until they are golden brown.

Vegetarians can do it by cutting out the eggs, ham and cheese … they are still delicious!
