Bolognese Pasta


Today we are going to prepare Pasta Bolognese, the true Italian recipe that my mother always made at home! The sauce was also added to the ravioli, cannelloni and gnocchi pastries! Needless to say, it is delicious.

Mom used to prepare it with concentrated sauce, which at that time I clearly remember that it was the tiquire flowers, I currently use the hunts because its flavor is similar, but not the concentrated sauce but the tomato sauce. Of course they can prepare it with ripe tomatoes but for uqe it is good, they must be of excellent quality … but I tell you, with these sauces it remains the same. You will not regret it!

Ingredients for the Bolognese Pasta (makes 6 people):

• 1/2 Kg of ground beef (lean)
• 1 can of tomato paste
• 1 medium onion
•       3 garlic cloves
•       1 bay leaf
•       Rosemary
•       Salt and pepper
•       Olive oil
• 1/2 glass of wine
•       Parmesan
•       Macaroni
•       1 tablespoon butter

Preparation of Pasta Bolognese:

Chop the onion and garlic and sauté in the olive oil together with the bay leaf and a pinch of rosemary.

Once they are cooked, add the meat, salt and pepper.

Stir and cook for about 10 minutes .. When the meat is cooked, add the half glass of wine .. the other 1/2 glass of wine is taken in the meantime! : D

Let the wine evaporate and then add the tomato paste. (always stir so that it does not stick)

Cook it over medium-low heat for approximately 1 hour. Add half a glass of water to prevent sticking and stir from time to time.

Cook the macaroni in salted water, when straining, add a tablespoon of butter to the pasta, add the sauce and serve with Parmesan cheese. Clever! 🙂

Note: The leftover sauce can be stored in plastic jars in the freezer … and so they have it ready for another opportunity
