Carrot Cake


These days watching cooking shows like a strange thing I craved a cake … but I couldn’t find which one. I do not know if it has happened to them that one says: I want to eat something but I don’t know what it is … well, just that. I remembered that a few years ago I made a delicious Orange Cake with chocolate chips and aha, more or less I was getting closer to craving. So I “consulted the audience” about the show as I have a really cool group on the Facebook page, and the vast majority voted for this delicacy: Carrot Cake!

You will not be able to believe how rich it is! and the cream cheese frosting, it was delicious. My children came from school and when they saw her their eyes went wide !! : D

Ingredients to prepare the carrot cake
• 2 cups all-purpose wheat flour
• 4 eggs
• 2 cups of grated carrots
• 2 cups of sugar
• 1 cup of corn or sunflower oil
• 1 teaspoon ground cinnamon
• 1 teaspoon of baking powder
• 1 teaspoon of baking soda
• 1/2 teaspoon salt
• 24 cm diameter mold

Ingredients for cream cheese frosting
• 1 and a half cups (350 grams) of cream cheese
• 1/2 cup of sugar
• The zest of 1/2 orange
• The juice of 1 orange
• Peeled walnuts for garnish

I told you it was easy right? well it is so! Watch the video above 🙂 Mix the four eggs in the electric mixer, along with the oil and grated carrots (if you beat it by hand it is also perfect).
Now add the flour, the two cups of sugar, the bicarbonate, the cinnamon, the baking powder and the 1/2 teaspoon of salt. We beat for a minute, it doesn’t take more than that. Meanwhile, preheat the oven to 190ºC.

We butter and flour a mold preferably one of those removable ones and add the mixture. We will bake for approximately 1 hour. I always say approximately because not all ovens are the same and you will not know if it is ready until you put a stick or a knife in it and it comes out dry. I had to leave her, for example, half an hour more.
Ready, we take it out of the oven to cool down … and meanwhile …

Preparation of the cream cheese frosting.
Beat by hand or in the mixer the cream cheese together with the other half a cup of sugar and zest and the orange juice until a smooth cream forms. It is incredible how orange gives a delicious aroma and flavor to desserts.

When the cake is cold, we will chop it crosswise. For this, since I do not have a cake cutter, I took some toothpicks as a reference and put them in the middle, and passed the knife there. If I did not explain myself well, higher in the video it looks clearer (minute 3:20) It is important that it is cold so that it does not break, I put it in the refrigerator for a while and it was more compact.

Fill half the cake with the frosting, cover with the other half, add more frosting to the top and finally decorate with a handful of walnuts.
