Christmas is here! and these days are the most beautiful of the year, where we have the feeling that everything will be better and a brand new year is coming that fills us with hope. These are days that inspire us to prepare the richest meals for our family and friends. And this time I wanted to make them a dessert that besides being super cute, is delicious and very easy to make so they can prepare it for Christmas dinner and for the end of the year too! As always, I also made the recipe on video so you can see all the details. Are you ready?

Ingredients to prepare the Christmas log
• 6 eggs
• 1/4 cup of wheat flour
• 1/2 cup sugar
• 1/4 cup of cornstarch
• 1 tablespoon of baking powder
• 1 can of dulce de leche (380 gr)
• 1 cup or more of grated coconut
• Nutella
• To decorate: fondant or white chocolate and green and red food coloring

Preparation of the Christmas log

The first thing we will do is separate the whites from the yolks and we will beat the whites until they are foamy almost to the point of snow. We can beat them by hand or with an electric mixer, and we add the sugar little by little without stopping beating.

When they are almost to the point of snow, we add the egg yolks one by one and continue beating until everything is mixed.

Now, we are going to sift the flour, the cornstarch and the baking powder with a sieve or with a strainer and we will mix in an enveloping way until well mixed and we will empty the mixture into a tray of approximately 50 x 30 cm covered with wax paper or even better with a silicone mat so it doesn’t stick to us. If you do not have wax paper or the mat, you can butter and flour the tray.

 

 

We must have the oven preheated to 180ºC and we will bake it between 25 and 30 minutes until it is golden brown. Then, while still hot, we will place a damp cloth on top and with the help of another tray we turn it over and proceed to roll it up carefully. We will leave it like that for 15 minutes to keep it in shape.

 

After 15 minutes we unroll it and cover it with the dulce de leche and sprinkle a lot of grated coconut on it … I love this combination! as well as the Alfajores de Cornstarch

We can make Dulce de Leche by cooking 1 liter of milk, 400 grams of sugar and a little Vanilla over low heat until it thickens and takes on color.

I added a cup of coconut but you can add more or omit it … as you prefer! After this we are going to roll it up again and it becomes easier for us because we gave it the shape previously and thus there is no chance that it will break.

What follows now is to cover it completely with Nutella and since we are going to simulate that it is a Christmas log, we are going to make the veins with the help of a fork, and we will simulate the snow with a little icing sugar or as in my case, not I had, I put the grated coconut in the blender to pulverize it and sifted it with the strainer.

Now let’s decorate it! I used red m & m and for the leaves I melted white chocolate in the microwave for 30 seconds, I added a few drops of green food coloring, I drew the leaf on a paper and on the wax paper and with a pallet (it was really a Chinese stick) on it I put the chocolate giving it the shape. I put it in the fridge and voila

If we decorate it at once we can keep it in the fridge and take it out just to serve, the detail is that the cake gets a little hard .. If we leave it out, it is softer but the decoration must be added right at the moment of serving because the m & m are discolored by the nutella oils.
