Easy Minestrone


This Minestrone if it is made as the recipe is, complies with the rules of the Anti-Diet. For those who do not know about this “no diet”, it is the way to combine food in such a way that we can eat practically everything without gaining weight. Isn’t that the best? for me if!! because I love to eat! And there is nothing worse than they tell you: You can’t eat pasta, for example, what? impossible im-po-si-ble! I don’t eat pasta and it gives me something. So I’m going to leave you the recipes but you should read the article on the correct food combination so that you understand what it is about and see what to eat everything and reduce if possible!

This dish complies with the rules for combining carbohydrates (pasta) with vegetables. Perfect!

Ingredients to prepare minestrone
• 2 large carrots
• 3 medium onions
• 2 cloves of garlic
• 300 gr of green beans (green beans or green beans)
• 1 handful of basil
• 2 large cabalacines
• 3 ripe tomatoes
• 1 stalk of Spanish celery (celery)
• 2 cup cauliflower, chopped
• 1 cup of peas
• 8 cups of vegetable broth or water
• 1 cup macaroni
•  Salt and pepper to taste
• Chopped parsley (to add at the end)

Preparation of minestrone

Super simple. Add the vegetable broth or water together with all the diced vegetables in a large pot. All except the tomato and parsley.

Then we will add the salt and pepper. Cover and cook until the carrots are soft.

Once they are cooked, we will add the short pasta that can be macaroni or any type of short pasta of our choice and let it cook for the time indicated on the package which is generally 5 to 7 minutes, and when they are ready we will correct the salt and it will be when to add the diced tomato. It is not added before because tomatoes cooked for a long time become acidic. Like when we reheat the soup it can happen .. so that is why it is always added at the end.

When we have the minestrone on the plate, we will add the minced parsley.
We do not add grains to this specific minestrone, because grains have a natural combination of proteins and carbohydrates at the same time, which is why many of us have a hard time digesting them. We will not add cheese either.
