Preparation of Grilled Salmon
Heat the skillet or griddle over medium-high heat. Wipe it with a napkin with olive oil to avoid sticking and salt and pepper the salmon on all sides and add it skin side down first. Let cook for 3 minutes then lower the heat a little and cover for 3 more minutes so that the steam finishes cooking, uncover and turn it over, cook it for 2 more minutes and voila, serve with vegetables (a fresh salad, asparagus, broccoli, etc. ).
