Studies indicate that it can improve mental health, brain and cognitive function. Coupled with this, it produces a feeling of well-being and joy when we eat it, perhaps it is because of the colors we add, because of its gel texture or because of the memories of our childhood.

Gelatina de Mosaicos

Preparation:

1.- To begin with the preparation of your mosaic jelly, prepare all the colored jellies following the instructions on the box. Use similar molds so that the squares are symmetrical and have more or less the same size. You must grease with a thin layer of vegetable oil to remove easily from the mold.

2.- To each envelope of colored gelatin you must add a tablespoon of unflavored gelatin or gelatin. If you don’t have powdered gelatin, you can use 4 sheets of unflavored gelatin for each tablespoon.

Special Tip: To make your jelly as eye-catching and eye-catching as possible, use bright and different colors. If you want you can add more colors to the recipe, but remember to also add more tablespoons of unflavored gelatin.

3.- Prepare the jellies according to the instructions on the box. Normally, for 20gr you need 500 ml of water, half boiling water and half cold water.

4.- Serve the already prepared gelatin in the molds you chose and let it harden completely.

5.- With the help of a paddle moistened in water, carefully remove the edges of the gelatin from the mold. Then chop it into squares with a damp knife. (It is important to moisten the utensils so that you do not break the structure of the gelatin). The size of the squares depends on your taste, the symmetry will make the jelly more visual and eye-catching.

6.- Now we must prepare the unflavored gelatin. Sprinkle the remaining 6 tablespoons in half a cup of water. Mix well and make it completely hydrated, this will take about 15 minutes.

7.- When the unflavored gelatin is very firm, put it in the microwave or in a water bath until it dissolves completely, you will obtain a thick and shiny liquid.

8.- Next you must mix the milk with the milk cream and the condensed milk in the blender. Pour in the vanilla and any other scent you like to give the recipe extra flavor.

9.- Add the unflavored gelatin as follows. Take a part of the milk mixture and add it to the gelatin. Stir well and quickly. Pour in a little more of the milk mixture. When the mixture is well homogeneous, you can add the rest of the unflavored gelatin to the whole mixture. With this you will prevent the gelatin from curdling in the milk base due to a thermal shock.

10.- At this moment we are ready to assemble the mosaic jelly. Place the colored gelatin squares in a greased mold (if you use the screw mold it would be ideal), Alternate the colors to make the result more striking. After placing all the squares, pour the milk jelly on top. Leave one centimeter of the edge unfilled. Hit the mold against the table to remove any air left in the mixture.

11.- Put the gelatin in the fridge for at least two hours so that it sets completely. After this time, take it to the freezer for about 10 minutes to make it easier to unmold. Place it on a plate that has already been removed from the mold and put it in the fridge until serving time.
