A variant of the delicious pasta to the original pesto is the one that is added asparagus and dried tomatoes. The preparation does not take much work, it is super simple and I loved the combination of flavors!
Ingredients for the Pasta with pesto with asparagus and dried tomatoes:
- 1 package of pasta (snails, screws or whatever you prefer)
- 1 bunch of asparagus
- 3 garlic cloves, minced
- A tablespoon of dried tomatoes (they come in oil)
- Pesto sauce that you can see how it is made >> HERE <<
- Parmesan
- Olive oil
- Salt and pepper
Preparation of Pasta with pesto with asparagus and dried tomatoes:
First, we remove the thickest part of the asparagus stem and chop them in half.
Then, we parboil the asparagus until they soften a little and then we sauté them for 5 minutes in olive oil with the minced garlic, salt and pepper. Almost at the end we add the chopped dried tomatoes. If you can’t get dried tomatoes you can use cherry tomatoes chopped in half and there if you fry a little more.
While we’re at it, we put the water to boil to make the pasta. When it is “al dente” we strain it and mix the asparagus and pesto in the same pot and add more Parmesan cheese.
