Recipe to prepare homemade Mayonnaise

Always happens to me. I want to make a Sandwichito and I run out of mayonnaise! and I yelled: – Nobody in this casaaa avisaaa! grrr! and of course, my children or dead laughing or blaming each other: you were the last! it was not you! and so. So it’s night I’m hungry and I’m not going out to buy anything. And when one already has in mind the ideal armed sandwich without the mayonnaise, it is not the same. The solution? Well, I do it .. and it is just as tasty or more 🙂

I go to the fridge, take a look and see … I just need this:

Ingredients to prepare homemade mayonnaise

  • 2 egg yolks
  • 1/2 teaspoon dijon mustard
  • 2 tablespoons of freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1 to 2 cups of oil (mild olive, sunflower, or corn)

Preparation of Homemade Mayonnaise

First of all, to prepare this rich mayonnaise the ingredients must be at room temperature so that the mayonnaise has the consistency it should have, and they say that we must prepare it in a glass, ceramic or plastic container … and not metal. .. although I prepare it in the blender that the blade is made of metal and it still fits me well .. my son would say: You are rebellious, you live to the limit and you challenge the little plastic pot hahaha, not seriously .. I have even made it with myself kitchenaid, which is a container, is made of metal and looks good.

First we will liquefy the egg yolks together with the lemon juice, mustard and salt. Then (this is where the trick is) we must add the oil little by little, let a little oil fall while we continue blending, because if we throw it in suddenly or in a big jet it will not come out … in a while we will see how it goes taking consistency. I do not put the exact amount of oil since it may be that it will come out well with one, one and a half or two cups … when it has the desired consistency, stop blending.

The taste of this mayonnaise has nothing to envy to commercial brands and it is healthier because it has no preservatives. We must keep it in the fridge, preferably in a sterilized glass container and it lasts for several weeks. Try it! We can invent and add whatever we want … for example, while we blend we can add a little piece of garlic or a few parsley leaves or a few grains of pepper.
