For these hot days there is nothing better than a fresh, cold and light meal. These days I was going down the street and what it caused me was just that, something with lemon and fresh. So I went straight to the supermarket to buy to kill the craving!
Ingredients for the seafood salpicon
- 1 Bag of frozen squid
- 1 sachet of medium peeled frozen shrimp
- 2 or 3 limes (or lemon) I like the lime better.
- 1 small onion
- 2 cloves of garlic
- 1/2 green pepper
- 1/2 red pepper
Preparation of the seafood salpicon
The first thing: We defrost the shellfish (fig. 1). Sauté the minced garlic in 2 tablespoons of olive oil (do not let it burn because otherwise it will taste bitter (fig. 2).
Add the shellfish with a pinch of salt and fry until they turn pink (not much, 3 to 5 minutes stirring is enough. (Fig. 3)
Meanwhile, chop the peppers and onions into very fine strips (fig. 4). We remove the shellfish, put them in a container, add what we have just chopped, a little more salt and the juice of the two limes (or lemon).
Wait for it to cool down a bit before putting it in the fridge for 1/2 hour. The acid in the lemon will literally cook everything. I recommend you see Grilled Salmon
