Tuscan Tomato Salad


Fresh food for the summer! I’ve always said (and I keep it) that the tastiest recipes are the simplest. You don’t need a lot of elaboration or a big budget to eat delicious. This salad is my favorite! I love the taste of bread with tomato.

 Ingredients for the Tuscan tomato salad:

  • Bar bread
  • 2 large ripe tomatoes
  • 1 spring onion
  • 4 fillets of anchovies
  • 1 clove garlic
  • Mild olive oil
  • 1 tablespoon of balsamic vinegar
  • Grated Parmesan cheese
  • A few leaves of fresh basil
  • Salt and pepper


Preparation of a Tuscan Tomato Salad

We chop the bread and place it on a baking tray, sprinkle salt and pepper, add a drizzle of olive oil and put it to gratin for 5 minutes.

Meanwhile cut the tomatoes into pieces, finely chop the onion, cut the anchovy very very small, crush the garlic clove and cut it very finely (if you have garlic crusher better) A few leaves of fresh basil. Add salt, pepper the Parmesan cheese, add the Parmesan cheese, a splash of olive oil, another of balsamic vinegar, take the bread out of the oven, add it to the salad and stir everything very well.

It is exquisite!

You can garnish with cherry tomatoes and some basil leaves on top!
