These Involtini di pollo (or chicken rolls) are very similar to Cordon Bleu. At first glance it seems a complicated dish but it is simpler than you think. It consists of wrapping the chicken that inside has a filling of fried spinach, ham and cheese, bathed in tomato sauce. Look at the ingredients and the preparation.

Ingredients for Chicken Involtini (for 4 people)

  • 8 chicken breast fillets
  • 300 grams of spinach
  • 1 onion
  • 2 cloves of garlic
  • Olive oil
  • Gouda cheese or preferred
  • 5 slices of ham
  • Salt and pepper

Preparation of the chicken involtini

First, we fry the garlic and onion with a little salt and add the spinach (fig. 1) Then we cook for approximately 5 minutes and then drain the water and oil (fig. 2)

Place the breast fillets on a plate or chopping board and add a little salt and pepper, the spinach sauce, the ham slice and the cheese (fig. 3)

We roll the breasts from the narrowest part to the widest. Make sure the filling does not come out and reinforce them with some toothpicks (fig. 4)

Then we fry them in oil until golden brown. You can serve them like this, or if you prefer (as I do) add a can of crushed tomatoes, or fried tomatoes and cook for approximately 10 minutes more (fig. 6) Or if not, another option is to always have Neapolitan Sauce in the fridge to bathe them with her
