• 1 large can of chickpeas
• 1 large bunch of spinach
• 1 onion
• 2 cloves of garlic
• 4 tablespoons of olive oil
• salt, pepper and thyme
Preparation of chickpeas with spinach
To prepare this dish, as you saw in the ingredients, I use canned chickpeas. You can also buy the grain raw if you prefer, but they are very hard and you have to soak them overnight and cook them with clean water for a long time to soften them. I am more practical and in the kitchen even more, and that is why I buy them canned, they are already soft and they are done in 5 minutes.
First we will count the sliced onion and the garlic in small pieces and fry it in olive oil (you can use sunflower or corn) Once they are transparent we add the chickpeas (to which we have drained the water from the can and washed Add a pinch of salt and pepper to taste and a half teaspoon of thyme. These will release a little water. Cook until reduced (3 to 5 minutes approximately)
Then we add the spinach, add enough since these are greatly reduced when cooking. Spinach complements the flavor of chickpeas and contains Vitamin A, C complex B, and is a high source of calcium and potassium
