This risotto with mushrooms is creamy, smooth and with a unique flavor! I tell you that I learned from the best !! the most beautiful Italian and the best cook in the world my mom ♥ who is gone but accompanies me in every recipe I prepare. It is perfect to accompany fish, chicken or meat, or to serve it only as a first course. Very simple preparation and few ingredients for a 5-star dish!

Ingredients to prepare Risotto with mushrooms:
2 cups of rice
8 large mushrooms
3 garlic cloves
Olive oil
Fresh parsley
6 tablespoons of Parmesan cheese
2 butter spoons
Salt and pepper to taste

 

Preparation of the risotto with mushrooms:

This risotto can be made with any edible mushroom or mushroom, this time I made them with crimini mushrooms because in my opinion they have a more intense flavor, more texture and are firmer and cost half as much as their cousin the white mushroom: P It was great! Do it and you will see what I am talking about.

The first thing we will do is take a medium saucepan and sauté the minced garlic and the sliced ​​mushrooms in the olive oil, taking care that the garlic does not burn because it will be bitter and it will not taste good. Add the salt, pepper and finally the minced parsley.

We stir and let them cook for approximately 5 minutes until they are reduced. Now add the two cups of rice, mix and add 7 cups of water. Cover and cook over low heat, stirring occasionally and make sure it does not dry out! If we see that it is already drying and is still somewhat hard, we add one more cup of water. We correct salt. When it is cooked and creamy (after 20 minutes or so) we turn off the heat and add Parmesan cheese. We serve it hot and garnish with another little parsley. I swear it is the best risotto in the whole world! You can accompany it with this delicious Toasted Bread with Garlic that is prepared in 5 minutes.

A glass of red wine and voilà! and they have a super delicious meal to share with their family or friends 🙂
