Ingredients for the Spanish Omelette:
• 4 Medium Potatoes
• 1 onion
• 2 garlic cloves
• 6 eggs
• Salt and pepper.
Preparation of the Spanish Omelette:
In a pan with a drizzle of oil, fry the onion and garlic, cut into julienne strips. When they are almost ready, add the potatoes that we have already peeled and cut into slices.
While they are cooking, add a pinch of salt and pepper and cut them with the same spatula or with a plastic knife to make them smaller
Once they are cooked, remove from the heat. Meanwhile beat the 6 eggs in a deep bowl, add another pinch of salt and pepper and then add the cooked potatoes, stir and return to the pan over medium heat.
While it cooks, peel off the edges so that when you turn it is not stuck. Once cooked on one side, place a plate on top and in an act of brave juggling: D flip it over quickly and place it back in the pan to cook it on the other side!
I love it because it is easy and fast to make, it gets you out of trouble because it does not have many ingredients … and it is delicious.
I make another very good version, which is adding spinach along with the potatoes … of course … it would no longer be an original Spanish omelette, but it is just as good! You can see this complete recipe for the spinach omelette with potatoes.
