INGREDIENTS FOR THE BLACK ROAST:

1 Round Boy
1 red bell pepper
1 medium onion
3 garlic cloves
A handful of olives (about 8)
a teaspoon of capers
5 sweet peppers
5 strips of bacon or 100 g of smoked bacon
1/2 cup of oil
3 tablespoons of wine vinegar
5 tablespoons Worcestershire sauce
2 tablespoons marinade.
3 spoonfuls of sugar.

Black Roast Preparation:

1 and 2.- We chop all the ingredients into tiny pieces (everything except the meat)

3. With a long and sharp knife we ​​pierce the meat (literally we stab it) several times to open holes on both sides

4. Place the meat in a container together with all the ingredients (except the sugar) and through the holes we also put the pieces of everything that we have chopped. We add the oil, the Worcestershire sauce, the marinade and the vinegar trying so that everything is soaked with the mixture. We cover and leave it in the fridge from one day to the next, we turn from time to time so that it soaks well.

5. After the day, put the meat aside and add the mixture from the container in a large saucepan and fry it until the vegetables are poached.

7. Cook until caramelized and brown.

8. We remove the sauce (we put it in another separate container)

9. Without washing that pan, cook the meat for 15 minutes (turning it to brown evenly)

10. Once golden brown, add the previous sauce again and cook for 10 more minutes, stirring so that it does not stick.

11. Add water until the piece of meat is almost completely covered, cover and let it be consumed (this process takes from 1 hour to an hour and a half)

12 and 13. If we see that the meat is ready, we simply uncover it so that it finishes evaporating faster.

14. Once the water that we have added is reduced, the richest part of this dish remains. It should be dark (hence the name of black roast), caramelised and delicious.

15. Cut the meat into 1 cm pieces and add the delicious sauce that we have made.
