Chicken Burritos


Ingredients for the Chicken Burritos:

  • 1 chicken without skin
  • 1 package of Mexican tortillas
  • 1/2 green paprika
  • 1/2 Red Paprika
  • 1 medium onion
  • 1 jar of Red beans (of those already cooked)
  • 2 tablespoons of Curry
  • 3 garlic cloves
  • Olive oil
  • 1 cayenne pepper
  • Yellow cheese
  • Salt and Pepper (and optional spicy)


Preparation of the Chicken Burritos:

First we remove the skin from the chicken, boil it with a 1 teaspoon of salt and when it is cooked, remove it and grind it. (we reserve the broth) I already tell you why;)


Chop the vegetables (reserve half for the beans) into small pieces, crush the cayenne pepper and sauté for 3 minutes, then add the chicken, the curry and cook for 5 to 10 more minutes. (Note: add a little of the broth that was left when you boiled the chicken so it is juicier).

I like to do it that way, but you can also make the stewed chicken and chop it small.

In another pan, sauté the other half of the vegetables and then add the beans. Cook for 5 minutes.

Then make the tortillas: A little chicken, beans, cheese (it is tastier) to roll up and eat !!!
