Ingredients for the Chicken with rice and Chinese type vegetables (4 people):
- 2 chicken breasts
- 1 cup of rice
- 1 zucchini
- 1 red pepper
- 1 carrot
- 1 small onion
- 1 clove garlic
- 4 or 6 mushrooms
- Soy sauce
- Olive oil
- a pinch of thyme and rosemary
- Salt and pepper to taste
Preparation of Chicken with rice and vegetables (Chinese type):
On the one hand we start to make the rice. For this add the cup of rice in a pot along with 2 and a half cups of water. (I use parboiled or parboiled rice because it doesn’t overcook).
When the water boils, lower the heat and cover until it cooks. They can also do it with brown rice that is also very rich. After being cooked, you add it to the pan of the vegetables that I explain below:
Cut the onion into julienne strips, the garlic and mushrooms into slices and the zucchini and carrot and paprika into strips (I use the potato peeler). Add salt and pepper and fry for 5-8 minutes. Then add a tablespoon of soy sauce. Cook for 3 more minutes and add the rice and stir everything.
Let’s go with the chicken: Add a drizzle (2 tablespoons) of olive oil to a large pan, add the cordate chicken in approximately 2 cm squares, add the salt to taste, pepper, thyme and rosemary. We stir and cook until golden brown. At this point add a splash of soy sauce (1 tablespoon) and cook for 3 more minutes.
