Cream of Auyama Recipe (Pumpkin or Pumpkin)

There is nothing that falls better on the body than a rich and warm cream of pumpkin. I prepare it very often and it is perfect for those days when we feel that we have eaten a lot, or we do not have much appetite or we simply want to eat light. Apart from being very tasty, it provides many benefits to the body, it is low in calories, it is detoxifying, perfect for when we have a bad stomach and they also say squash helps fight anemia


Ingredients to prepare the cream of pumpkin
• 1 Kg of pumpkin (pumpkin, squash)
• 2 medium onions
• 3 garlic cloves
• 2 medium potatoes
• 1 and 1/2 liters of chicken broth (or vegetable if you do an anti-diet)
• Salt and pepper to taste

Preparation of the pumpkin cream
First we wash the squash and cut it into pieces of 3 or 4 cm more or less, without removing the shell or skin. I am in favor of thinking that it is precisely there where the flavor is most concentrated. If you see the recipe for Torta de Auyama, I won’t take it off either and believe me, it has a lot more flavor.

We will peel and cut the potatoes also into pieces of approximately 4 cm, I always put potatoes because they make it creamier. We chop the onions and garlic into small pieces and add everything in a large enough pot together with the chicken or vegetable broth.This broth is optional, obviously it gives more flavor but if you want it lighter you can still just add water and it is just as good add salt and pepper to taste, you can also add a little coriander or cilantro or chives if you like. Cover and cook over medium heat for approximately 40 minutes.

Stir from time to time, add salt if necessary and let it cool down a bit. After you make sure that it is cold, you can put half of the soup into the blender, I add half only so there are some whole pieces that I love (Putting it hot in the blender is not a good idea because the lid jumps with the steam and you can burn) Add back to the pot, stir a little, and if you want you can add a touch of Parmesan cheese and serve.
