- 6 eggs
- 3 potatoes (600 gr)
- 1 small onion
- 1 green bell pepper
- 2 glasses of olive oil

Elaboration:
1.- The first thing we must do is peel and chop the onion into medium cubes. Wash the green pepper with plenty of water, remove the stem and seeds and chop them into small cubes.
2.- If the potatoes are dirty, wash them with plenty of water. Then peel and cut in half lengthwise and finally cut each piece into very thin half moons.
3.- Add the onions, green pepper and potatoes in a pan, season to your liking and fry over low heat for 20 minutes.
4.- Remove the vegetables from the pan and drain it with the help of absorbent paper. Reserve the oil in a container. Clean the pan with absorbent paper.
5.- Crack the eggs, add them to a large bowl and beat them a lot until they get a foam. Season them to your liking and add the fried potatoes, onion and pepper and mix very well so that everything is incorporated.
6.- Place the pan back on the fire, add a splash of the oil and add the mixture. Beat gently with a wooden spoon and wait 20 seconds for it to start to set.
