Mini Omelette in cupcake molds


Ingredients for the mini omelettes

1/2 onion diced
2 cups of sliced ​​mushrooms
2 tablespoons of olive oil
12 eggs (1 egg per person / omelette)
1 bunch of chives
1 teaspoon of salt and 1/2 of pepper
Gouda cheese or any cheese for gratin
1 mold (tray) to make cupcakes

Preparation of the mini omelettes

First we fry the onion in the oil and after 3 minutes we add the mushrooms and cook for 3 more minutes.

We beat the eggs (1 egg for each mini omelette you want to make) and add the salt, pepper and chopped chives and then add the previous sauce and mix everything well.

Fill each bowl of the cupcake pan with the mixture.

And we bake at 180º C between 15 and 25 minutes (the time depends on your oven, always watch it so that they do not burn) When they are almost ready add cheese and gratin for 2 minutes. Bon appetit!
