One thing that chicken has is its versatility. I buy it whole because I take full advantage of it since even with the bones you can make a rich consommé. (apart from that it costs a lot less)
Ahh yes, at first getting used to removing the skin and itching it is kind of tedious, but after a few they will become a trained ninja and will do it even with their eyes closed! It just takes a good sharp knife.
This is half breast, since the other half and the thighs I did two days ago like “rice with chicken”
I chopped this half breast crosswise (you place the palm of your hand on it and carefully cut horizontally down the middle) so you have two pieces and it also cooks better. (I also make some not very deep cuts at the top so it also helps not to be raw inside)
It looks good right? It only has: salt, pepper, thyme and sweet paprika powder. Tap it with your hand so that the dressings stick well. Heat the pan, add a drizzle of olive oil (1 tablespoon) and cook on both sides for 5 minutes.
